Mango Pudding With Coconut Milk
Ingredients
- 2 x Mangoes, 12 ounce each
- 1 1/4 c. Water
- 2 pkt Unflavored gelatin
- 2/3 c. Sugar
- 1/2 c. Lowfat milk
- 1/2 c. Coconut lowfat milk
Directions
- Cut mango into 1/4 in cubes to make 1/2 c.. chop remaining mango to Make about 1 1/2 c. puree with 1 c cool water till smooth.
- Sprinkle gelatin over remaining 1/4 c cool water in a bowl; let soften for several minutes.
- Combine sugar and lowfat milk in a 2 quart saucepan. cook, stirring, over med-low heat, till sugar dissolves. remove from heat; add in softened gelatin and stir untl dissolved.
- Add in coconut lowfat milk and mango puree; whisk till bleneded. mix in diced mango. pour into a 1 quart mold or possibly divide among 5 ramekins. cover and refrigeratetill hard, about 3 - 4 hrs.
