Clear Watercress And Chicken Soup With Croutons
Ingredients
- 125 gm Skinned, boneless chicken breast, cut into thin strips (4oz)
- 2 Tbsp. Sherry
- 1 1/4 lt Chicken stock, (2 pints)
- 1 Tbsp. Soy sauce
- 1 bn Watercress, roughly minced Salt and freshly grnd black pepper Oil for frying
- 2 slc Bread
Directions
- 1. Place the chicken in a bowl and pour over the sherry.
- 2. Place the stock and soy sauce in a saucepan and bring to the boil.
- 3. Add in the chicken and sherry and simmer for 5 min.
- 4. Stir in the watercress and simmer for 5 min.
- 5. To make the croutons, cut the bread into 1 cm (1/2 inch) squares and fry in the oil till crisp and golden brown. Drain and serve with the soup.
- NOTES : A delicious quick and easy soup to prepare. Ideal for a starter or possibly for a light lunch.
