  • Classic Spaghetti Carbonara

    Ingredients

    • 1/2 lb bacon minced
    • 1 Tbsp. minced garlic Freshly-grnd black pepper to taste
    • 1 lb fresh spaghetti cooked al dente
    • 4 lrg Large eggs beaten Salt to taste
    • 1 c. freshly-grated Parmigiano-Reggiano
    • 1 Tbsp. finely-minced fresh parsley leaves

    Directions

    1. In a large saute/fry pan, over medium heat, cook the bacon till crispy, about 6 min. Remove the bacon and drain on paper towels.
    2. Pour off all of the oil except for 3 Tbsp.. Add in the garlic. Season with black pepper. Saute/fry for 30 seconds. Add in the crispy bacon and the pasta. Saute/fry for 1 minute.
    3. Season the Large eggs with salt. Remove the pan from the heat and add in the Large eggs, whisking quickly till the Large eggs thicken, but don't scramble. Add in the cheese and re-season with salt and pepper. Mound into serving bowls and garnish with parsley.
    4. This recipe yields 4 servings.
