    Clam Sauce for Spaghetti

    This was a favorite growing up. Easy and fast to make. I like this best over Angel Hair pasta. This is not a heavy sauce and is on the healthier side. The cornstarch helps to thicken and keep the sauce on the noodles.

    Ingredients

    • Olive Oil ¼ Cup
    • Garlic Cloves 2 (sliced, minced & browned in Oil)
    • Water ¼ Cup
    • Canned Clams 1 Can (Roughly 4oz can)
    • Clam Juice 1 Can
    • Dried Parsley 1 Tbsp
    • Oregano 1 Tsp (or more)
    • Salt ½ Tsp
    • Pepper ¼ Tsp
    • Corn Starch ½ Tbsp

    Directions

    1. Slice garlic and then mince garlic
    2. Brown garlic in olive oil over medium heat
    3. Let oil cool
    4. Add all ingredients except clams.
    5. Cook with medium-low heat for a few minutes
    6. Add clams for last minute
    7. Pour over hot pasta
    8. Serve

      A while back, I printed this out so that I could make it and then had an accident so my wonderful Husband offered to make it. It was FABULOUS! He knows I love garlic so he added quite a bit more than the recipe called for. He has made it again for me and company as well and I suggested he use a little more corn starch than the recipe called for to allow for the sauce to stick to the pasta a bit better and it was perfect. Traditionally this is served over linguine but we LOVE it with angel hair!
