Citrus Scallops
A fun summer tasting way to dress up your scallops! Ingredients
- 1 1/2 lbs. sea scallops
- 2 Tbsp. lemon juice
- 1 Tbsp. chopped fresh parsley
- 1 tsp. grated orange rind
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 garlic cloves, minced
- 1 Tbsp. olive oil
- 1 Tbsp. chopped fresh parsley
Directions
- Combine the 1st 7 ingredients in a large bowl, stirring well to coat.
- Chill 5 minutes.
- Heat oil in a large non-stick skillet over medium-high heat.
- Add scallops mixture; saute for 4 minutes or until scallops are done.
- Top with 1 Tbsp. of parsley.
