Citrus Scallops

A fun summer tasting way to dress up your scallops!

Ingredients

  • 1 1/2 lbs. sea scallops
  • 2 Tbsp. lemon juice
  • 1 Tbsp. chopped fresh parsley
  • 1 tsp. grated orange rind
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 garlic cloves, minced
  • 1 Tbsp. olive oil
  • 1 Tbsp. chopped fresh parsley

Directions

  1. Combine the 1st 7 ingredients in a large bowl, stirring well to coat.
  2. Chill 5 minutes.
  3. Heat oil in a large non-stick skillet over medium-high heat.
  4. Add scallops mixture; saute for 4 minutes or until scallops are done.
  5. Top with 1 Tbsp. of parsley.
