  • Citrus Poppyseed Waffles With Blackberry Compote

    Ingredients

    • 1 3/4 c. all purpose flour, sifted
    • 1/4 tsp salt
    • 1 3/4 tsp baking pwdr
    • 1/4 tsp baking soda
    • 1 pch allspice grated zest of one lemon grated zest of one orange
    • 1 Tbsp. poppy seeds
    • 1/4 c. melted butter
    • 3 x egg, separated
    • 1 3/4 c. two percent lowfat milk
    • 2 Tbsp. icing sugar Blackberry, Peach Compote
    • 1 c. fresh or possibly frzn blackberries
    • 1 lrg peach, peeled, and, stone removed, sliced
    • 1/4 c. corn syrup
    • 1 pch allspice

    Directions

    1. In a medium bowl, sift together the flour, salt, baking pwdr, baking soda and allspice. Stir in the grated zests and poppy seeds.
    2. In another medium bowl, whisk together the melted butter, egg yolks and the lowfat milk till smooth. Make a well in the dry ingredients and gradually stir in the wet till just combined. Don't continue to stir.
    3. In a clean, dry bowl whisk the egg whites till fluffy. Gradually add in the icing sugar while continuing to beat till whites hold softs peaks. Fold gently into batter. Ladle waffles into prepared waffle pans, according to manufacturer's instructions.
    4. Blackberry, Peach Compote:Combine all ingredients in a medium saucepan and cook gently over low heat, till mix is warmed through and slightly thick, about 5-8 min.
    5. Serve hot over waffles.
