  • Semolina Budino With Berry Compote

    Ingredients

    • 4 x Egg yolks
    • 3/4 c. Sugar
    • 1/2 tsp Vanilla extract
    • 4 ounce Melted butter
    • 3/4 c. Lowfat milk
    • 1/4 c. Semolina flour
    • 1/3 c. Cake flour
    • 4 x Egg whites
    • 1 Tbsp. Sugar
    • 1 c. Berry compote, (recipe follows)
    • 1 pt Blackberries, blueberries, strawberries
    • 3 Tbsp. Water
    • 2 Tbsp. Sugar

    Directions

    1. Preheat oven to 325 degrees.
    2. Add in egg yolks and sugar to the bowl of a food processor, and using the paddle attachment beat till ribbons begin to create. At this point, add in the vanilla the butter and the lowfat milk.
    3. Sift the semolina and cake flour together and beat into the egg mix.
    4. In a separate bowl beat the egg white and the sugar together till medium soft peaks form.
    5. Fold whites into batter and pour into sugared ramekins. Cover with aluminum foil.
    6. Bake in water bath just till set. Serve slightly hot with whipped cream and berry compote.
    7. BERRY COMPOTE:In a medium saucepan over medium heat, cook the berries in the water with the sugar till they are soft. Refrigerateand serve on top of the Budino.
