Cinnamon Sugar Glazed Sweet Potato Slices
Ingredients
- 4 lrg Sweet potatoes, (about 3 pounds)
- 3 Tbsp. Vegetable oil
- 1 Tbsp. Sugar
- 1 tsp Cinnamon
Directions
- Preheat oven to 425F.
- Peel potatoes and cut crosswise into 1/3-inch-thick slices. In a large bowl toss potatoes with oil to coat and spread in one layer in shallow baking pans. Bake potatoes till just tender, about 20 min.
- In a small bowl stir together sugar and cinnamon and sprinkle proportionately over potatoes. Bake potatoes till glazed and tender, about 5 min.
- Serves 4 to 6.
