chunky beef noodle soup
This is a recipe I got from a friend, Hope you enjoy! Ingredients
- 1 pound boneless round steak, cut into 1/2 inch cubes
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 tbsp vegetable oil
- 2 cups water
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 can (10.5 oz) condensed beef consomme, undiluted
- 1 to 2 tsp chili powder
- 1 tsp salt
- 1/2 tsp dried oregano
- 1 cup uncooked spiral pasta
- 1 medium green pepper, chopped
- 1/4 cup minced fresh parsley
Directions
- In a large sauce pan, cook round steak, onions, and garlic in oil until the meat is browned and the onions are tender, about 7 minutes.
- Stir in water, tomatoes, consomme and seasoning, bring to a boil.
- Reduce heat, cover and simmer until is tender, about 1 1/2 hours.
- Stir in psta and green pepper.
- Simmer, uncovered, until pasta is tender, about 8 to 10 minutes.
- Add parsley
