Christmas Kebabs With Satay Sauce
Ingredients
- 1 Tbsp. Soy sauce
- 1 Tbsp. Extra virgin olive oil
- 12 x Cherry tomatoes
- 1 x Red pepper, de-seeded
- 1 x Courgette, trimmed
- 1 x Green pepper, de-seeded Or possibly use a selection of vegetables of your choice Fresh coriander and lime wedges, to garnish Bay leaves
Directions
- 1 Soak 18 wooden kebab skewers in water for about 20-30 min. Cut the vegetables into pcs about 2cm/ 3/4", large sufficient not to split when threaded onto skewers. Leave the tomatoes whole.
- 2 Preheat the grill to a medium heat. Combine the soy sauce with oil in a small bowl and season with pepper.
- 3 Thread a selection of vegetables onto each skewer and brush with the oil mix. Grill, turning regularly, for about 8-10 min.
- Serve with the satay sauce.
