Chocolate Zucchini Bread
Chocolate Zucchini Bread has a moist texture and the deep chocolate flavor which comes from unsweetened cocoa powder and semi sweet chocolate chips. Ingredients
- 3 Cups All Purpose Flour
- 3 Cups Granulated Sugar
- 1/2 Cup Baking Cocoa Powder
- 1 1/2 Tsp. Baking Powder
- 1 1/2 Tsp. Baking Soda
- 1 Tsp. Salt
- 1/4 Tsp. Ground Cinnamon
- 4 Large Eggs
- 1 1/2 Cups Canola Oil
- 2 Tbls. Butter, Melted and Cooled
- 1 1/2 Tsp. Vanilla Extract
- 1 1/2 Tsp. Almond Extract
- 3 Cups Zucchini, Grated
- 1 Cup Pecans, Toasted & Chopped
- 1/2 Cup Mini Chocolate Chips
- 1/2 Cup Dark Raisins, Plump If Needed (Optional)
Directions
- In a large bowl, combine the first seven ingredients. Whisk the eggs, oil, butter and extracts.
- Stir into dry ingredients just until moistened. Fold in zucchini, pecans, chocolate chips and raisins; if using. Pour into three greased and floured 8-in. x 4-in. loaf pans.
- Bake at 350° for 55-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes; remove from the pans to wire racks.
- Yield: 3 Loaves
