  • Chocolate Orange Angel Food Cake

    Ingredients

    • 1 1/4 c. sugar (divided use)
    • 1 c. flour
    • 1/2 tsp salt
    • 12 x egg whites, at room temperature
    • 1 Tbsp. lemon juice
    • 3 tsp vanilla extract
    • 1 Tbsp. grated orange rind
    • 1 1/2 x (3-oz)-size) dark orange chocolate bars Or possibly (1.2-oz-size) Newman's

    Directions

    1. Own Organics Dark Orange Chocolate Bars, grated finely
    2. Preheat oven to 350 degrees.
    3. Sift together three times: 1/4 c. sugar, flour and salt. Sifting onto wax paper makes it easier.
    4. In large mixing bowl, beat egg whites till frothy. Add in lemon juice. Beat till soft peaks form. Sprinkle remaining c. sugar lightly onto whites, 1/4 c. at a time and continue beating at medium speed just till blended.
    5. Sift 1/4 c. flour mix over whites and gently mix in by hand. Mix in vanilla and orange rind. Continue folding in flour mix, alternating it with grated chocolate till incorporated. Make sure to fold gently to avoid reducing volume of egg whites.
    6. Pour into clean, dry, ungreased, 10 inch tube pan and bake 40 to 45 min, till lightly browned. Knife inserted into center should be clean when removed.
    7. Remove pan from oven and invert pan. Cold 30 to 45 min. Run knife around edges and center of tube to remove.
    8. Serve with strawberries and lightly sweetened whipped cream, if you like, or possibly for real decadence, with warm chocolate fudge sauce and ice cream.
