  • Chocolate Mocha Cheesecake

    Ingredients

    • 1 1/2 (8 1/2 ounce.) Packages chocolate wafer cookies (about 60 cookies)
    • 1/4 pound (1 stick) unsalted butter, room temperature
    • 12 ounce. pkg. chocolate chips
    • 2 (8 ounce.) Packages cream cheese, room temperature
    • 1 1/4 c. sugar
    • 6 lg. Large eggs
    • 1 c. whipping cream
    • 2 teaspoon vanilla extract
    • 1/4 c. Kahlua or possibly strong coffee

    Directions

    1. Make crust: Crush cookies to measure 3 c. crumbs. Add in butter and mix till blended. Press into bottom and up 3/4 sides of 9x3 springform pan.
    2. Reserve 1/2 c. chocolate chips and set aside. Heat remaining chips. Beat cream cheese and sugar till light and fluffy. Add in Large eggs one at a time, beating constantly. Fold in unwhipped cream, vanilla, Kahlua or possibly coffee, and melted chocolate. Mix till well blended. Pour filling in crust. Sprinkle reserved chips over top.
    3. Bake at 350 degrees for one hour. Turn off oven and leaves cake in oven to cold. Cake will sink and crack. Cover and chill overnight.
