  • Chocolate Marshmallow Cookie Bars

    Ingredients

    • 2/3 c. Golden brown crisco shortening
    • 2/3 c. Firmly-packed brown sugar
    • 1 x Egg
    • 1/2 tsp Vanilla
    • 1 c. Graham cracker crumbs
    • 2/3 c. All-purpose flour
    • 1/4 tsp Salt
    • 6 Tbsp. Whipping cream
    • 10 ounce Lowfat milk chocolate candy bars Broken into small pcs
    • 1 c. Mini marshmallows

    Directions

    1. 1. Heat oven to 350F (180C). Grease 13 x 9-inch (33 x 23 cm) baking pan with shortening.
    2. 2. Combine shortening, brown sugar, egg and vanilla in medium bowl. Beat at medium speed of electric mixer till well blended.
    3. 3. Combine graham cracker crumbs, flour and salt. Add in to creamed mix. Mix at low speed till just blended.
    4. Spread dough proportionately into prepared pan.
    5. 4. Bake at 350F (180C) for 13 to 15 min, or possibly till edges are lightly browned and set. Don't OVERBAKE. Cold completely.
    6. 5. Place cream in heavy saucepan; bring to simmer. Remove from heat. Add in chocolate pcs. Stir till melted and smooth. Stir in marshmallows. Spread proportionately over cooled crust. Chill till hard, at least 2 hrs. Cut into bars.
    7. Makes: 3 dozen bars
