  • Chocolate Chunk Cookies

    Using different nut butters (i.e. almond butter or peanut butter) is an option in this recipe. The dough will seem oily because there is no flour but cookies bake up beautifully.

    Ingredients

    • 1 cup cashew butter (almond is also very good; or any nut butter)
    • 1 cup brown sugar
    • 1 cup dark chocolate, chopped into 1/4" chunks
    • 1 tsp baking soda
    • 1 egg
    • 1/2 tsp salt
    • Turbinado sugar to coat

    Directions

    1. Preheat oven to 400 degrees
    2. Using a mixer, mix nut butter, brown sugar, baking soda and salt together. Add the egg and mix thoroughly. Then, by hand, stir chocolate chunks into mixture. Form batter into walnut-sized balls and roll in Turbinado sugar. Place dough balls on cookie sheet 3-4 inches apart. Bake for 7 minutes. Cool briefly.
