  • Chocolate Chip Oatmeal Quick Bread

    Ingredients

    • 2 c. all-purpose flour
    • 1 c. rolled oats
    • 1/2 c. granulated sugar
    • 1/2 c. brown sugar
    • 2 tsp baking pwdr
    • 1 tsp baking soda
    • 1/2 tsp cinnamon
    • 1/2 tsp salt
    • 1/2 c. minced walnuts
    • 1/2 c. miniature chocolate chips
    • 1 1/2 c. buttermilk
    • 2 lrg Large eggs
    • 1/4 c. melted butter

    Directions

    1. In a large bowl, mix the dry ingredients.
    2. In a small bowl, beat buttermilk, Large eggs, and melted butter.
    3. Stir wet mix into dry ingredients just till proportionately moistened (batter will be lumpy).
    4. Scrape into a buttered and floured 9- by 5-inch loaf pan, and bake in a 350 degrees oven till a wooden skewer inserted in the center comes out clean, about 50 min.
    5. This recipe yields 1 loaf.
    6. Comments: Cold weather puts us in the mood to bake. So why not give a friend a head start Layer the dry ingredients for this easy quick bread into a lowfat milk bottle. The mix will keep for up to 18 months - then all which's left is to add in the wet ingredients and bake.
    7. We used craft paper adhered with double-stick tape to cover the original lowfat milk bottle graphics and the lid.
    8. A label on the back of the bottle contains the recipe instructions.
    9. Yield: 1 loaf
