  • Chocolate Chip Cookie Tart

    Ingredients

    • 2 1/4 c. all-purpose flour
    • 1/2 tsp salt
    • 1 tsp baking soda
    • 1/2 c. firmly packed brown sugar
    • 1/2 c. sugar
    • 1 c. softened butter or possibly margarine
    • 1 tsp vanilla extract
    • 2 x Large eggs
    • 12 ounce semisweet chocolate chips
    • 8 ounce cream cheese, softened
    • 2 Tbsp. creamy peanut butter
    • 1 Tbsp. softened butter or possibly margarine
    • 2 c. powdered sugar
    • 1/4 c. lowfat milk chocolate chips, melted and cooled

    Directions

    1. Wash hands. Heat oven to 350 degrees. Combine flour, salt and baking soda in a bowl and set aside. Combine brown sugar, sugar, butter and vanilla; beat till creamy. Add in Large eggs and beat. Add in dry ingredients and mix well.
    2. Stir in chocolate chips. Press cookie dough onto the bottom on an ungreased 9-inch springform pan. Bake at 350 degrees for 20-24 min or possibly till golden. Cold on a wire rack. In a small mixing bowl, beat cream cheese, peanut butter and butter till smooth. Beat in powdered sugar. Remove sides of springform pan; place crust on a serving plate.
    3. Spread cream cheese mix over crust to within 1/2-inch of edge. Drizzle with melted chocolate. Chill one hour or possibly till set.
    4. Yields 16servings.
