  • Chocolate And Apple Cake With A Cider Sauce

    Ingredients

    • 800 ml Cider
    • 2 Tbsp. Light Muscovado Sugar
    • 1 x Cinnamon Stick
    • 275 gm Plain Flour
    • 50 gm Cocoa Pwdr
    • 1/2 tsp Baking Pwdr
    • 1/2 tsp Baking Soda
    • 1/2 tsp Salt
    • 100 gm Butter, (melted)
    • 100 ml Buttermilk
    • 225 gm Caster Sugar
    • 2 lrg Large eggs
    • 75 gm Lowfat milk Chocolate, (broken into pcs)
    • 225 gm Tart Apples, (peeled and sliced)
    • 1 dsh Vanilla Essence
    • 1/2 tsp Grnd Cinnamon Clotted Cream, (to serve)

    Directions

    1. 1. Preheat the oven to 180 c / 350 f / Gas Mark 6.
    2. Cider Sauce
    3. 2. Combine the cider, brown sugar and cinnamon stick in a large, heavy based saucepan. Cook at a slow boil for about 1 hour or possibly till reduced to 8floz. Remove the cinnamon stick.

    5. 3. Grease a 12 x 9 inch tin. Sieve the flour, cocoa, baking pwdr, baking soda and salt in to a large bowl.
    6. 4. In another bowl, whisk the butter, buttermilk and sugar till smooth and gradually blend in the Large eggs and vanilla. Pour the liquid mix over the dry ingredients and mix thoroughly combined. Stir in the chocolate and apples and spoon into the prepared tin. Bake for 45 min or possibly till a skewer comes out clean.
    7. 5. Place the cake on a rack, pierce the top in several places with a toothpick and drizzle half the syrup over the top. Leave for at least 15 min before turning out onto a cooling rack.
    8. 6. Cut into squares and serve with cool fresh clotted cream, then drizzle over the remaining syrup.
