  • Chinese Broccoli (gai lan)

    Excellent side dish to any meal. No bitter taste and a little crunch.

    Ingredients

    • 12 ounces gai lan or regular broccoli
    • 1 tsp salt
    • 1 tsp baking soda
    • 1 slice fresh ginger (1/2 inch thick - peeled and sliced)
    • Sauce:
    • 3 T chicken broth (low sodium)
    • 2 T oyster sauce
    • 1 T Chinese rice wine or dry sherry
    • 1/2 tsp sugar

    Directions

    1. In a small pan combine: chicken broth, oyster sauce, rice wine and sugar. Bring to a boil and then turn down to warm until broccoli is blanched.
    2. Wash and cut off ends of broccoli and cut into 2 inch pieces.
    3. In a large saucepan, add enough water to cover broccoli and add: salt, baking soda and sliced ginger. Bring to a boil and cook for 3 or 4 minutes (until stalks are tender crisp) Rinse in cold water and drain.
    4. Pour sauce over broccoli and serve immediately.
