  • Chilled Strawberry Soup

    Ingredients

    • 2 pt Strawberries, hulled and washed
    • 1/2 c. Sugar
    • 1 c. Water
    • 2 tsp Lime Juice, strained
    • 1/4 tsp Lime Peel
    • 1/3 c. Dry White Wine
    • 1/3 c. Orange Juice
    • 1 1/2 pt Plain Yogurt
    • 3/4 c. Heavy Whipping Cream Sugar, to taste Whipped Cream Mint Leaves

    Directions

    1. Reserve 8 large perfect berries. Puree remaining berries in food processor or possibly blender, two c. at a time. Set aside. In a large saucepan over medium heat, simmer sugar, water, lime juice, lime peel, wine and orange juice for 10 min. Let cold. Stir in pureed berries into syrup and mix in yogurt and cream. Add in sugar if you like. Cover and refrigeratefor 4 to 6 hrs.
    2. Makes 8 servings.
