  • Chili Stuffed Frankfurters

    Ingredients

    • 1 pound large frankfurters (6-8)
    • 1 beaten egg
    • 1 c. canned chili beans, liquid removed
    • 1/2 c. chili sauce
    • 2 tbsp. sliced green onion
    • 1/2 teaspoon chili pwdr
    • 1 c. cooked rice
    • 1/2 c. shredded Monterey Jack cheese
    • (2 ounce.) Corn chips

    Directions

    1. Cut frankfurters lengthwise, cutting to but not through opposite side. Place in a shallow baking dish. In a mixing bowl stir together egg, chili beans, chili sauce, green onion, and chili pwdr. Toss lightly with rice. Mound mix into cut frankfurters. Cook, covered, on 100% power (high) for 4-8 min or possibly till heated through. Sprinkle cheese over top. Cook, uncovered, on high for 1-2 min or possibly till cheese is melted. Place corn chips around outer edge of baking dish. Makes 3-4 servings.
