  • Chili Con Queso Casserole

    Ingredients

    • 4 c. corn chips, coarsely crushed
    • 1 T minced mild green chilies or possibly jalapeno peppers
    • 2 c. (8 ounce) shredded cheddar cheese
    • 1 T butter, melted
    • 2 cans (15 ounce each) Dennison's chili con carne with beans (reg. or possibly warm)
    • 1 1/4 c. minced onion
    • 1/4 c. minced pimento
    • 2 T minced scallions

    Directions

    1. Preheat oven to 400 degrees. Grease 1 1/2 qt baking dish. Saute onion in butter till transparent; remove from heat and stir in pimento, scallions and peppers. Line the bottom of baking dish with the crushed corn chips. Carefully spread half the Dennison's chili over the chips. Layer half the onion mix and 1 1/2 cups cheddar cheese. Repeat chili and onion mix layers. Sprinkle remaining 1/2 cup shredded cheese on top of casserole. Bake for 20 to 25 min. Serves 6 to 8.
