  • Chili Cheese "Corn Dog" Casserole

    This thrifty casserole has all the flavors of some of your kids’ fast-food favorites without the drive-through price tag!

    Ingredients

    • 1 (8 ½ oz.) pkg. corn bread mix
    • ½ cup chopped onion
    • 1 tbsp. vegetable oil
    • 1 (1 lb.) pkg. hot dogs, sliced in half lengthwise and cut into 1-inch pieces
    • 1 (15 oz.) can chili with beans
    • 2 tbsp. brown sugar
    • ½ tsp. garlic powder
    • ½ tsp. chili powder
    • 1 cup shredded cheddar cheese, divided

    Directions

    1. Preheat oven to 350°. Spray an 8x8 baking dish with nonstick cooking spray.
    2. In a small bowl, prepare corn bread mix according to package directions. Spread ½ corn bread batter in prepared baking dish.
    3. In a large skillet, sauté onion in vegetable oil over medium heat until translucent. Add hot dogs; sauté 3-4 minutes longer, or until hot dogs begin to brown.
    4. Stir in chili, brown sugar, garlic powder and chili powder; heat through. Stir in ¾ cup shredded cheese.
    5. Spoon hot dog mixture over corn bread batter. Spread remaining corn bread batter over hot dog mixture. Sprinkle remaining cheese over corn bread.
    6. Bake, uncovered, at 350° for 28-32 minutes or until a toothpick inserted in center comes out clean. Let stand 5 minutes before serving.
