    This easy, great-tasting chili was adapted from a recipe I got from the wife of a former employer, God rest his soul.

    Ingredients

    • 2 lbs. ground beef
    • 4 med. onions, chopped
    • 3 tsp. salt
    • 3/4 tsp. freshly ground black pepper
    • 4 cloves garlic, minced
    • 1/4 tsp. red pepper flakes (or adjust to make as mild or spicy as you like)
    • 1 can tomato sauce
    • 1 cup beef broth
    • 2 cans (1 lb. each) dark red kidney beans
    • 2 tsp. salt
    • 1 tsp. garlic powder
    • 1 tsp. paprika
    • 1 Tbsp. chili powder
    • 1 Tbsp. Worcestershire sauce
    • 1 Tbsp. cumin
    • 2 cans (15 oz. each) diced tomatoes

    Directions

    1. Put the ground beef and onions into a Dutch oven. Season with 1 tsp. salt and 1/4 tsp. black pepper; brown and drain. Add the garlic and red pepper flakes to the pot and heat one minute.
    2. Add the drained beef mixture and remaining ingredients, except diced tomatoes; simmer 1 hours, covered.
    3. Add the tomatoes and simmer 10 more minutes.
