Chili
This easy, great-tasting chili was adapted from a recipe I got from the wife of a former employer, God rest his soul. Ingredients
- 2 lbs. ground beef
- 4 med. onions, chopped
- 3 tsp. salt
- 3/4 tsp. freshly ground black pepper
- 4 cloves garlic, minced
- 1/4 tsp. red pepper flakes (or adjust to make as mild or spicy as you like)
- 1 can tomato sauce
- 1 cup beef broth
- 2 cans (1 lb. each) dark red kidney beans
- 2 tsp. salt
- 1 tsp. garlic powder
- 1 tsp. paprika
- 1 Tbsp. chili powder
- 1 Tbsp. Worcestershire sauce
- 1 Tbsp. cumin
- 2 cans (15 oz. each) diced tomatoes
Directions
- Put the ground beef and onions into a Dutch oven. Season with 1 tsp. salt and 1/4 tsp. black pepper; brown and drain. Add the garlic and red pepper flakes to the pot and heat one minute.
- Add the drained beef mixture and remaining ingredients, except diced tomatoes; simmer 1 hours, covered.
- Add the tomatoes and simmer 10 more minutes.
