Ancho Chili Paste
Ingredients
- 4 x Ancho chilies, stem and seeds removed
- 1 sm Onion, peeled and minced
- 1 x Clove garlic, peeled and minced
- 1 x Jalapeno, minced
- 1 x Serrano chili, minced
- 1 x Chipotle chili, minced
- 1 sm Bunch fresh cilantro
- 1 c. Rich chicken stock
Directions
- Place all ingredients in a medium saucepan over medium heat. Bring to a boil, then simmer for 10 min. Pour into a blender and puree till smooth. Set aside till ready to use.
