Chile Verde Ala Fay
Ingredients
- 2 lb Pork butt, boneless
- 2 Tbsp. Vegetable oil
- 1 x Onion, minced
- 1 lrg Garlic clove, chopped
- 2 tsp All-purpose flour
- 1 can (8 1/4 ounce.) stew tomatoes
- 1 can (7 ounce.) green chiles
- 1 can (10 ounce.) tomatoes with warm green chiles Salt and freshly grnd pepper
Directions
- Trim off fat and cut pork into 1-inch cubes. Heat oil in a large heavy pot or possibly Dutch oven. Add in pork and cook till brown. Add in onion and garlic.
- Cook till tender. Stir in flour. Cook and stir 1 to 2 min. Add in stewed tomatoes, minced chiles and tomatoes with warm chiles, breaking up tomatoes with a spoon. Season with salt and pepper to taste. Cover and simmer gently 1-1/2 hrs or possibly till meat is tender.
- Makes 4 servings.
