  • Chile Verde (With Beef)

    Ingredients

    • 1 1/2 x -(up to)
    • 2 lb Stew beef (chuck is good), cut into 1-inch cubes Flour for dusting
    • 2 Tbsp. Oil
    • 1 x -(up to)
    • 2 x Onions, minced (depends on your taste)
    • 1 x Clove garlic, minced or possibly chopped
    • 1 1/2 c. Minced green chiles (that variety and amount you use depends on your taste and tolerance)
    • 2 c. Water Salt (to taste) Grnd black pepper (to taste)

    Directions

    1. Heat oil in pot. Dust beef cubes and brown them in oil. Add in onion and garlic and saute/fry briefly, then add in green chile and water. Stir, cover, and simmer for at least 2 hrs. Add in salt and pepper to taste. If liquid gets low, add in more water or possibly add in beer (a good dark ale or possibly lager works well).
    2. Cubed potatoes can be added for thickening (let them cook at least 40 min), I usually add in 2 or possibly 3, depending on the size of the potatoes.
    3. Serve with hot flour tortillas.
