  • Chile Turkey Enchiladas

    Ingredients

    • 2 cups diced left-over turkey
    • 1-1/2 cups shredded taco-style cheese (6 oz)
    • 1/2 cup sliced roasted red bell peppers (from a jar)
    • 1 can (4.5 oz) chopped green chiles
    • 1 cup sour cream
    • 1 can (10 oz) mild enchilada sauce
    • 1 pkg. flour tortillas for burritos
    • 1-1/2 shredded cheddar cheese ( 6 oz)
    • lettuce, tomato, avocado, red onion, taco sauce and additional sour cream

    Directions

    I have made this recipe many, many times. Feel free to use what ever cheese you have on hand. Favorite recipe number 2.

    Heat oven to 350. Spray 13 x 9 (3 qt.) glass baking dish with non-stick cooking spray. In a medium bowl, combine turkey, taco cheese, roasted red bell peppers, chilies and sour cream; mix well.

    Spread about 2 teaspoons enchilada sauce on each tortilla. Top each with 1/2 cup turkey mixture. Roll up tortillas; arrange, seam side down, in sprayed baking dish. Top enchiladas with any remaining enchilada sauce. Sprinkle with cheddar cheese. Spray sheet of foil with cooking spray; cover baking dish with foil, sprayed side down.

    Bake 45-60 mins. or until thoroughly heated, remove foil during last 5 mins of baking time. If desired, serve with lettuce, tomato, avocado, red onion, taco sauce and additional sour cream.

    Note: This recipe can be doubled with the same great results:)
