Chile Con Queso Y Cerveza (Cheese And Chili Beer Dip)
Ingredients
- 2 c. Grated sharp Cheddar
- 3/4 c. Beer (not dark)
- 2 c. Grated Jarlsberg
- 1/2 c. Liquid removed canned tomatoes, minced
- 2 Tbsp. All-purpose flour
- 1 bot pickled jalapeno chili, chopped
- 1 sm Onion, chopped Tortilla chips as an accompaniment
- 1 Tbsp. Unsalted butter
Directions
- In a bowl toss the cheeses with the flour and reserve the mix. In a large heavy saucepan cook the onion in the butter over moderately low heat, stirring, till it is softened, add in the beer, the tomatoes, and the jalapeOo, and simmer the mix for 5 min. Add in the reserved cheese mix by 1/2 cupfuls to the beer mix, stirring after each addition till the cheeses are melted, serve the dip with the chips.
