  • Chile Chicken Soup

    Ingredients

    • 1 1/2 lb skinless boneless chicken breast halves cut into
    • 1 x -inch cubes
    • 3 x 4.5-oz cans minced green chiles
    • 1 x 15-oz can no-salt-added pinto beans
    • 1 x 14.5-oz can no-salt-added stewed tomatoes undrained
    • 2 c. water
    • 1/4 tsp grnd cumin
    • 1/4 tsp dry oregano
    • 1 lrg onion minced
    • 1 x clove garlic crushed
    • 6 Tbsp. fat-free lowfat sour cream
    • 6 Tbsp. shredded reduced-fat cheddar cheese
    • 3 Tbsp. sliced green onions

    Directions

    1. Place first 9 ingredients in a 3-1/2 or possibly 4-qt electric slow cooker. Cover and cook on HIGH 4 hrs. Or possibly, cover and cook on HIGH 1 hour; reduce heat to LOW, and cook 7 hrs. Spoon into bowls; top each serving with 1 Tbsp. lowfat sour cream, 1 Tbsp. cheee, and sprinkle proportionately with green onions.
