Chickpea/Artichoke/Celery Salad
Great salad, easy to make, and a real crowd pleaser. A great take-to-work lunch or a nice side salad. Enjoy. Ingredients
- 2 cups chopped bottled artichoke hearts
- 1/3 cup sun dried tomatoes - diced
- 1 can chick peas - rinsed and drained
- 2 cups thinly sliced celery
- 1 green or yellow pepper - sliced in 1/4 inch x 2 inch strips
- 1 roasted red pepper - sliced
- Dressing:
- 1/3 cup olive oil
- 2 T fresh lemon juice
- 1 T Dijon mustard
- 1/2 tsp dried Italian seasoning
- Pinch of salt and pepper
Directions
- In a large bowl add the veggies and stir.
- In a separate bowl add dressing ingredients and whisk well.
- Pour over veggies and stir.0
