Chickpea/Artichoke/Celery Salad

Great salad, easy to make, and a real crowd pleaser. A great take-to-work lunch or a nice side salad. Enjoy.

Ingredients

  • 2 cups chopped bottled artichoke hearts
  • 1/3 cup sun dried tomatoes - diced
  • 1 can chick peas - rinsed and drained
  • 2 cups thinly sliced celery
  • 1 green or yellow pepper - sliced in 1/4 inch x 2 inch strips
  • 1 roasted red pepper - sliced
  • Dressing:
  • 1/3 cup olive oil
  • 2 T fresh lemon juice
  • 1 T Dijon mustard
  • 1/2 tsp dried Italian seasoning
  • Pinch of salt and pepper

Directions

  1. In a large bowl add the veggies and stir.
  2. In a separate bowl add dressing ingredients and whisk well.
  3. Pour over veggies and stir.0
