Chicken With Sun Dried Tomatoes
Ingredients
- 2 pound boneless chicken breast (cut into serving pcs)
- 3 ounce. melted butter
- 2 tbsp. chopped garlic
- 4 ounce. sherry
- 3 ounce. extra virgin olive oil
- 2 tbsp. minced shallots
- 6 ounce. sun dry tomatoes
- 8 ounce. beef or possibly veal stock
Directions
- Presoak tomatoes in extra virgin olive oil for at least 15 min. Drain and reserve oil. Then boil tomatoes in water for 2 min. Meanwhile, season chicken with salt and pepper. Saute/fry in oil (left from tomatoes) and butter, then remove. Add in shallots, garlic and tomatoes. Glaze with sherry, reduce heat and add in stock. Add in chicken and continue simmering till chicken is fully cooked. Serve with rice.
