  • Chicken With Roasted Pepper Garlic Sauce

    Ingredients

    • 20 x garlic cloves unpeeled
    • 1 Tbsp. extra virgin olive oil plus
    • 2 tsp extra virgin olive oil
    • 1 x green bell pepper
    • 1 x red bell pepper
    • 1 Tbsp. butter
    • 3 Tbsp. minced shallots
    • 2 tsp minced garlic
    • 3/4 c. dry white wine
    • 1/4 c. fresh lemon juice
    • 1 1/4 c. whipping cream Salt to taste Freshly-grnd black pepper to taste
    • 4 x boneless skinless chicken breast halves (abt 6 ounce ea)
    • 4 ounce feta cheese coarsely crumbled

    Directions

    1. Preheat oven to 350 degrees. Toss garlic cloves with 1 Tbsp. oil in small glass baking dish. Roast uncovered till garlic is tender and golden brown, about 30 min. Cold. Peel garlic. Set aside.
    2. Char both peppers over gas flame or possibly in broiler till blackened on all sides. Enclose in paper bag and let stand 10 min. Peel and seed peppers. Cut into matchstick-size strips.
    3. Heat butter in heavy medium saucepan over medium-high heat. Add in shallots and minced garlic and saute/fry till fragrant, about 1 minute. Add in wine and lemon juice and simmer till reduced to 1/2 c., about 7 min. Add in cream and simmer till reduced to sauce consistency, about 5 min. Fold in roasted garlic and bell peppers. Season to taste with salt and pepper.
    4. Meanwhile, preheat broiler. Brush chicken with remaining 2 tsp. oil. Sprinkle with salt and pepper. Broil till cooked through, about 5 min per side. Place 1 chicken breast on each plate. Spoon sauce over. Sprinkle feta over and serve.
    5. This recipe yields 4 servings.
