Chicken with Dumplings
Ingredients
- 3 ½ lb. chicken
- 3 carrots
- 3 stalks celery
- 3 cloves garlic
- Rub for Chicken:
- ½ tsp. salt
- ½ tsp. black pepper
- ½ tsp. turmeric
- ½ tsp. curry powder
- 2 tablespoons olive oil
- Dumplings:
- 1 cup flour
- 1 tbs. baking powder
- 1 tsp. sugar
- ½ tsp. salt
- ½ tsp. black pepper
- 1 tablespoon margarine
- ½ cup milk
Directions
- Preheat Oven 350 degrees:
- Combine the ingredients for the rub in a small bowl.
- Place cleaned chicken in a baking pan. Rub the chicken with the rub-mixture.
- Place carrots, celery and garlic around the chicken. Fill the baking pan half-way with water.
- Bake the chicken 55-60 minutes or until the juices run clear.
- For the Dumplings:
- Place the dry ingredients in a bowl. Add the margarine. Cut the margarine until crumbly. Add the milk while stirring.
- Take the broth and veggies from the cooked chicken and place in a sauce pot.
- Heat the broth to simmering and spoon dumplings into the pot. Cover and let simmer for approximately fifteen minutes.
- Serve the chicken broth and dumplings with the chicken.
