Chicken With Celery Sauce
Ingredients
- This is my family's favorite chicken recipe.
- 4 x skinless, boneless chicken breasts
- 1/2 c. flour, seasoned with salt and pepper
- 3 Tbsp. extra virgin olive oil
- 1 sm onion, finely minced
- 1 can cream of celery soup
- 1 c. lowfat milk
- 1/2 tsp dry thyme
- 1/4 tsp grnd cumin
Directions
- Dredge the chicken pcs in the flour, and brown thoroughly in the extra virgin olive oil. Remove chicken from pan and saute/fry onion in remaining oil(you can add in more oil if necessary)till brown. Add in celery soup, thyme and cumin plus salt and pepper to taste.
- Stir in lowfat milk, bring to a boil and then return chicken to pan. Cover and simmer over very low heat for 30 min, stirring often. Serve over rice.
