Ayam Bumbu Rojak (Chicken With Spicy Sauce)
Ingredients
- 1 x Broiler or possibly fryer Chicken with skin 450g
- 1 lrg Onion, finely minced
- 2 x Cloves garlic, minced Finely
- 3 Tbsp. Oil
- 1 tsp Brown sugar
- 1 x Red chilli, crushed
- 2 x Candlenuts, grated
- 1/4 x Roll shrimp paste
- 1 tsp Sweet soy sauce
- 2 tsp Salt
Directions
- Cut chicken into serving portions
- Fry onion and garlic in oil till golden. Add in brown sugar, chilli, candlenuts and shrimp paste and stir. Add in chicken to this spicy mix.
- Then add in tamarind juice, soy sauce, 1 c. water and salt. Cover tightly and cook slowly till liquid is completely absorbed by chicken. Serve with rice.
