  • Chicken With Bacon, Cream And Thyme

    Ingredients

    • 4 x boneless chicken breasts - (6 ounce ea) with skin
    • 1 Tbsp. vegetable oil
    • 1 x garlic clove chopped
    • 8 slc bacon
    • 8 sm fresh thyme sprigs
    • 1/2 c. chicken stock or possibly water
    • 1 c. whipping cream Salt to taste Freshly-grnd black pepper to taste

    Directions

    1. Preheat the oven to 350 degrees.
    2. Lightly salt and pepper the chicken breasts. Wrap two pcs of bacon around each chicken breast, forming an X in the middle of the skin side of each breast. Tuck two sprigs of thyme behind the bacon.
    3. Heat the vegetable oil in a frying pan which can go into the oven over medium-high heat. Place the chicken breasts, bacon-side down in the pan and cook till the bacon and chicken skin is browned. Turn over and cook till the other side is browned.
    4. Drain off the fat and add in the stock or possibly water, cream and garlic. Bring to a boil and place in the oven. Bake uncovered for 15 to 20 min till the cream has thickened.
    5. Remove from the oven and season with salt and pepper. Let rest a few min before serving.
    6. This recipe yields 4 servings.
