  • Chicken "Wings" With Sauce

    Ingredients

    • 4 x boneless skinless chicken breasts
    • 1/4 c. skim lowfat milk
    • 1/4 c. flour
    • 1/4 tsp salt
    • 1/4 tsp freshly-cracked black pepper
    • 2 Tbsp. vegetable oil
    • 1/2 c. honey mixed with
    • 1/4 c. Dijon Mustard

    Directions

    1. Cut chicken breasts length-wise into 1/2-inch strips. Place into large bowl. Pour lowfat milk over chicken strips and mix to coat well. Place in single layer onto wax paper. Mix flour, salt and pepper together in a c.. Sprinkle over chicken pcs, turning chicken to coat proportionately. Shake to remove excess.
    2. Pour oil into large non-stick skillet. Heat over medium-high heat. Place chicken in an even layer into pan. Fry, turning once on each side till golden. Remove and place on paper towels to drain. Serve with sauce.
    3. This recipe yields 4 servings
    4. NOTES : People with diabetes or possibly those on calorie-controlled diets may count one serving as: 4 meat, 2 starch, 1 fruit.
