    Chicken White Bean Florentine Soup

    I make soup all year round, we love soup! I save leftovers to throw into soups. I also make huge pots of soup and give some to family and friends. I can not make a small pot of soup, I have tried it just doesn't work :)

    Ingredients

    • 2 cartons of chicken broth, or homemade
    • 1 lg can Hanover Great northern beans
    • 1 sm 15oz can Hanover Great northern beans
    • 1 28oz can diced tomatoes, slightly drained
    • 1.5 lbs shredded chicken
    • 6-8 stalks of celery chopped
    • 1lb carrots chopped
    • 2-3 lg onions chopped
    • 1-2 tsp chopped garlic
    • 24oz fresh baby spinach chopped
    • 8-10 cups water, add chicken bouillon powder if you like
    • 1 1/2 cup uncooked pastina
    • fresh basil chopped, about 4-6 lg leaves
    • salt and pepper
    • dry thyme to taste

    Directions

    1. Add onions, carrots, celery, beans, tomatoes, broth, garlic, water,thyme and bring to a boil.
    2. Reduce heat and simmer till vegetables are done.
    3. Add chicken and spinach and return to a boil.
    4. Add pastina and cook for 6 mins.
    5. Add basil and season to taste.
