  • Chicken Tikka Pittas With Tzatziki

    Ingredients

    • 1 Tbsp. Tikka curry paste
    • 3 Tbsp. Natural lowfat yoghurt
    • 1 sm Boneless, skinless chicken breast, cubed
    • 3 Tbsp. Natural lowfat yoghurt
    • 1 ounce Cucumber, finely minced
    • 1 Tbsp. Fresh mint, minced
    • 1 Tbsp. Fresh parsley, minced Seasoning
    • 2 sm Pitta bread Salad leaves and sliced tomato

    Directions

    1. In a small non-metallic bowl, mix together the curry paste and lowfat yoghurt, stir through the chicken and leave to marinate for at least 30 min. Cover a baking tray with foil and cook the chicken.
    2. Combine the tzatziki ingredients in a bowl, and serve with the chicken in pitta bread.
