Chicken Thighs with Artichokes
An easy, delicious meal using simple ingredients. Ingredients
- 4 boneless chicken thighs
- 1 can artichoke hearts, quartered
- 1 cup Ken's Caesar salad dressing
- 1 cup dry white wine
- juice of 1 lemon
- 1/4 cup grated parmesan cheese
- 2 tbsp. capers (optional)
- Fresh ground black pepper
Directions
- Preheat oven to 350 degrees.
- Place chicken thighs in roasting pan. Add artichoke hearts. Pour salad dressing, wine, and lemon juice over chicken. Sprinkle with cheese and capers and black pepper,
- Roast uncovered for 1 1/2 - 2 hours. Meat should be brown and fork tender.
