Chicken Shrimp Gumbo
Ingredients
- 5 lb Chicken, cut up
- 3 1/2 tsp Salt
- 1/2 c. Shortening
- 1/2 c. Flour
- 1 c. Minced onion
- 1 x Clove garlic, crushed
- 2 c. Water
- 2 Tbsp. Worcestershire sauce
- 1 Tbsp. Lemon juice
- 1/2 tsp Black pepper
- 1/2 tsp Powdered thyme
- 2 lb Cooked shrimp
- 1/2 c. Minced celery
- 1/2 c. Minced green onion
- 1 tsp Gumbo file pwdr
- 1/2 c. Parsley, minced
Directions
- Sprinkle chicken with 1-1/2 tsp salt. Heat shortening in large pot (6-quart Dutch oven). Add in chicken pcs & borwn on all sides. Remove chicken & set aside. Stir flour into warm fat in that chicken was browned. Stir constangly & keep heat low till flour is golden. Add in onion & garlic.
- Stir till clear. Stir in water. Add in chicken, Worcestershire sauce, 2 tsp salt, lemon juice, black pepper & thyme. Cook 1-1/2 hrs or possibly till chicken is tender. Add in shrimp, celery & green onion. Cook 30 min longer. Remove chicken & add in file pwdr; stir. Pour liquid over chicken. Serve with rice & top with minced parsley.
