  • Chicken Shrimp Gumbo

    Ingredients

    • 5 lb Chicken, cut up
    • 3 1/2 tsp Salt
    • 1/2 c. Shortening
    • 1/2 c. Flour
    • 1 c. Minced onion
    • 1 x Clove garlic, crushed
    • 2 c. Water
    • 2 Tbsp. Worcestershire sauce
    • 1 Tbsp. Lemon juice
    • 1/2 tsp Black pepper
    • 1/2 tsp Powdered thyme
    • 2 lb Cooked shrimp
    • 1/2 c. Minced celery
    • 1/2 c. Minced green onion
    • 1 tsp Gumbo file pwdr
    • 1/2 c. Parsley, minced

    Directions

    1. Sprinkle chicken with 1-1/2 tsp salt. Heat shortening in large pot (6-quart Dutch oven). Add in chicken pcs & borwn on all sides. Remove chicken & set aside. Stir flour into warm fat in that chicken was browned. Stir constangly & keep heat low till flour is golden. Add in onion & garlic.
    2. Stir till clear. Stir in water. Add in chicken, Worcestershire sauce, 2 tsp salt, lemon juice, black pepper & thyme. Cook 1-1/2 hrs or possibly till chicken is tender. Add in shrimp, celery & green onion. Cook 30 min longer. Remove chicken & add in file pwdr; stir. Pour liquid over chicken. Serve with rice & top with minced parsley.
