  • Chicken Scaloppine With Mushroom Sauce

    Ingredients

    • 1 lb Chicken Breasts boned and
    • 2 Tbsp. Flour Salt and Fresh Grnd Pepper
    • 1 x Egg 2 Tablespoons Water
    • 1 1/2 c. Breadcrumbs 3-5 Tablespoons Extra virgin olive oil (Virgin or possibly Extra)
    • 1 x To 2 Tablespoons Butter

    Directions

    1. CHICKEN SCALOPPINE WITH MUSHROOM SAUCE (Svs. 4) One Recipe Mushroom Sauce
    2. (next message) Lb. chicken between sheets of waxed paper til thin.
    3. Combine flour, salt and pepper in pie plate. Beat egg with water in shallow dish. Dredge meat in flour mix, dip in egg mix, and then roll well in breadcrumbs. IMPORTANT: LET COATED MEAT "REST" FOR AT LEAST 15 Min BEFORE PROCEEDING. THIS WAY THE CRUMBS Will not FALL OFF THE CHICKEN. Try it - it works! Heat oil and butter in large skillet over medium high heat.
    4. Add in meat in batches and saute/fry till browned, turning once, about 3 to 5 min, adding more oil and butter if necessary. Keep hot and spoon mushroom sauce over!
