  • Chicken & Potato Hotpot

    I came across this interesting British recipe from irmadilondon.blogspot and decided to give it a try. I served this dish with some rice and mixed vegetables.

    Ingredients

    • About 500g chopped chicken breast pieces
    • 2 large onions - chopped
    • 3 cloves garlic - finely chopped
    • 1 tbsp curry powder
    • 1 tin chopped tomatoes
    • 1 bowl of mixed peas/carrots/corns
    • 1 tbsp mixed herbs
    • 1 cube of chicken essence (I used half cube of Knorrs brand)
    • I tbsp flour mixed with some water
    • Olive oil for frying
    • Topping:
    • 2 large potatoes - thin round slices (use a grater) seasoned with salt and pepper.
    • Grated Mozzarella cheese (any white cheese will do)

    Directions

    1. Fry the onions and garlic till golden brown followed by the curry powder. Give it a stir till there is no raw smell.
    2. Add in the tomatoes and stir till well mixed.
    3. Next add in the chicken, herbs and cube. Mix well till chicken is done (may add little water to help cook the chicken).
    4. Once chicken is cooked, add in the flour mixture and let the gravy thicken and set aside.
    5. Pour the gravy into a casserole or pie tin (anything you like) and top it closely with the potatoes and finally the cheese.
    6. Bake at 180 degree for 50 minutes or till the potatoes appear crispy and cheese melted.
    7. Serve hot as it is or with bread/rice.
