Chicken Potato Chip Casserole #2

- 3 C diced, cooked chicken
- 1 can cream of mushroom soup
- 3/4 C mayonnaise
- pepper to taste
- 4 oz. sour cream (low fat ok)
- 2 stalks celery, diced
- 1/2 C diced scallions or 1/2 small onion
- 1 T extra virgin olive oil
- 1- 8 oz. bag classic potato chips, crumbled, divided
- 4 oz. shredded cheese
- 1 recipe buttered rice of choice for 6-8 persons
Directions
- Heat oven to 350.
- Saute onion and celery until lightly browned in oil
- Combine them with the soup, sour cream, chicken, mayo, and half the potato chips.
- Pour into a 9x13 baking dish.
- Bake 45 minutes.
- Remove from oven and sprinkle on cheese, let melt, then rest of potato chips.
- Let rest 15 minutes.
- Serve over rice.
