    Chicken Potato Chip Casserole #2

    A variation on one already posted by me. Added some different ingredients, and oh boy, it's a keeper.

    Ingredients

    • 3 C diced, cooked chicken
    • 1 can cream of mushroom soup
    • 3/4 C mayonnaise
    • pepper to taste
    • 4 oz. sour cream (low fat ok)
    • 2 stalks celery, diced
    • 1/2 C diced scallions or 1/2 small onion
    • 1 T extra virgin olive oil
    • 1- 8 oz. bag classic potato chips, crumbled, divided
    • 4 oz. shredded cheese
    • 1 recipe buttered rice of choice for 6-8 persons

    Directions

    1. Heat oven to 350.
    2. Saute onion and celery until lightly browned in oil
    3. Combine them with the soup, sour cream, chicken, mayo, and half the potato chips.
    4. Pour into a 9x13 baking dish.
    5. Bake 45 minutes.
    6. Remove from oven and sprinkle on cheese, let melt, then rest of potato chips.
    7. Let rest 15 minutes.
    8. Serve over rice.
