  • chicken pot pie

    Ingredients

    • crust wet ingredients:
    • 1 stick margarine
    • 1 cup sour cream
    • 1 egg
    • crust dry ingredients:
    • 1 cup flour
    • 1 tsp salt
    • 1 tsp baking powder
    • 1 tsp thyme
    • Filling:
    • 2 cups cooked chicken (2 chicken breasts)
    • 1/2 cup sliced carrots
    • small can mushrooms
    • 2 diced potatoes
    • small can corn

    Directions

    1. Crust:
    2. cream wet ingredients together
    3. combine dry ingredients together
    4. mix both inside casserole dish and spread crust over the bottom and up the sides
    5. saute vegetables in margarine or olive oil
    6. cook chicken in olive oil
    7. combine veg and chicken and add 1 can of cream of chicken soup (2 if needed)
    8. Place in pie crust
    9. top with grated cheddar cheese
    10. Bake 400 for 30 minutes
