Chicken Pear Salad Orientale
Ingredients
- 1 3/4 ounce Uncooked rice sticks (Maifun), (about 1/4 pkg.)
- 1/4 c. Vegetable oil
- 1 quart Shredded iceberg lettuce
- 1 x Fresh Green Anjou Northwest Pear (or possibly, cored and sliced Other USA Pear)
- 1 c. Cooked shredded chicken
- 1/2 c. Diagonally sliced green onion and sliced Green pepper
- 1 Tbsp. Toasted sesame seeds, (optional)
- 1/4 c. Vinegar
- 1/4 c. Sesame oil
- 1 Tbsp. Soy sauce
- 1 tsp Salt
- 1 tsp Sugar
- 2 Tbsp. Catsup
- 1 Tbsp. Hoisin sauce
- 1 Tbsp. Salad oil
- 1 Tbsp. Sugar
- 1 Tbsp. Vinegar
- 1/2 tsp Salt
Directions
- Break rice sticks into 3- or possibly 4-inch lengths. Heat oil to 375 to 400 F; fry rice sticks till white and fluffy. Turn once to fry pcs proportionately. (Entire process than 1/2 minute.) Drain on paper towels. Toss rice sticks with remaining ingredients.
- Serve with choice of dressing.
- Sesame Oil Dressing: Combine all ingredients; mix well.
- Makes about1/2 c..
- Hoisin Dressing: Combine all ingredients; mix well.
- Makes about 1/3cup.
- Always be sure to use ripe pears.
