  • Chicken Marengo (For Pressure Cooker)

    Ingredients

    • 1 x Broiler-fryer chicken, quartered
    • 1 tsp Coarse black pepper
    • 1/3 c. Seasoned flour
    • 3 Tbsp. Salad oil
    • 1 clv garlic
    • 1 x 3 oz can Mushrooms, sliced
    • 1 x 1 lb. can Italian tomatoes
    • 1 c. Dry White wine

    Directions

    1. France is famed for her great ways with chicken. Like Chicken Marengo, created for Napoleon. In a pressure cooker, it becomes deliciously tender in min instead of hrs, complete with captivating French flavor.
    2. Rub chicken with pepper, dredge in flour. Heat Pressure Cooker, add in oil, garlic. Lightly brown chicken. Remove garlic and chicken. Add in mushrooms. Stir in tomatoes and 1/2 c. wine; replace chicken. Close cover securely. Cook 10 min. Let pressure drop of its own accord. Remove chicken to heated platter. Add in remaining wine. Blend four with water. Stir into sauce. Simmer till thickened. Salt to taste; pour gravy over chicken.
    3. Makes 4 servings.
